Eggless Pineapple Upside Down Cake

Hi all, before I proceed to recipe wishing you an enlightened and fruitful year ahead. 
Pineapple are excellent source of vitamin C but this is not the reason I've baked Pineapple upside down cake…do I need any reason to bake, absolutely not!
I love baking and it is so soothing to see your stuff is rising inside the oven, it lift up my mood too.
Accuracy or Measurements????
Yes, It is much more like you are in a chemistry lab and you can’t proceed without right measurements and accuracy is much needed to get the best result (no ones like half baked or distorted cakes) otherwise you know...
It could explode, Booooom!!!
Hahaha, do you like the aroma when the cake starts baking?
Of course you do! 

Hmmm, I’ll tell you later about my love and affair towards baking.
Let’s concentrate on cake, Specially for this recipe I suggest you to get canned pineapple if you are unaware of cutting pineapple. You just do not have to bake; it should look desirable to eat. Right, think about it.

























 Ingredients:

Plain flour (maida)250gm
Canned Pineapple 5 slice
Amul butter 100 gm
Nestle Milk Maid 200 ml
Baking pwd1 tsp
Baking soda1/2 tsp
Yellow colour good pinch
Pineapple juice2 tbsp
Pineapple essence1/2 tsp
Water     50 ml
Milk 100 ml
For Caramel:
Sugar4 tbsp
Amul Butter 2 tbsp
Water1 tbsp
Method:
  1. Sift flour, baking powder & baking soda.
  2. Drain Pineapple slices and keep it aside.
  3. Melt the sugar and butter over medium heat, add the water and keep it caramelizing until you observe brown colour.
  4. Pour the caramel mixture in to baking tray and arrange pineapple slices.
  5. In a separate glass bowl beat the butter and milkmaid until it becomes light and smooth.
  6. Mix pineapple essence and food colour.
  7. Add pineapple juice and beat it well.
  8. Alternately, add the flour and milk, water in 3 additions, starting and ending with flour. Mix until evenly combined.
  9. Pour the mixture over arrange pineapple slices and flatten it with spatula.
  10. Preheat oven for 10 minutes at 180c and bake the cake for 27-33 minutes.
  11. Invert the cake immediately on serving dish. 

  RS Notes :-)
  • Bake the cakes until a Wooden skewer or Tooth pick comes out clean.
  • How to avoid cracks: Hold the cake pan about 3inch height above the surface and drop it, do it 5-6 times.
