Vanilla Cake with Buttercream Frosting

I was looking for the accurate recipe of chocolate or any frosting cake as it’s my first try on full iced cake and I don’t wanted to spoil it at all. Coincidentally, I found the recipe just two days before my niece birthday and the first thing I did is to take the glance of ingredients list and I was like whoohoo except Amul butter, I’ve everything at hand.
 
I baked two layer cake for her and single layer cake for us and you can only get a chance to see single layer piece. I hope you did understand that I have reserve the double layer cake for birthday girl.

Ok, now we are done with Shopping, baking, assembling the cake and frosting. But you don’t know it was my bad luck my maid didn’t came that day and I had to clean all the terrible mess, moreover everything seems so buttery and creamy and you can’t say no to the situation.

Oh yeah I said Oh no!
but it didn’t made a much difference, I washed everything and little scare to try next time.

I’m very stubborn soul  ;)  next time I’ll bake chocolate cake only need a best chocolate that could make my effort worthwhile.
This is the simplest vanilla cake with confectionery sugar icing.
I found the recipe here,prepared almost same quantity, and divided the mixtures in to oval shape pan and flower shape cake pan.

Let’s bake it…




























Ingredients:
Plain flour (maida)345 gm
Sugar 250 gm
Baking pwd1 tbsp
Egg 4
Vanilla essence2 tsp
Cadbury Gems1 cup
Amul Butter     226 gm
Milk 240 ml



For Icing :
Sugar460 gm
Butter226 gm
Vanilla essence1 tsp
Orange red colour4-5 drops
Milk2 tbsp

Method:

  1. Sift the flour and baking powder.  
  2. In a separate bowl beat the butter until soft, later add sugar and Again, beat it until the mixture gets light and fluffy.
  3. Beat the egg separately for 5 minutes until foamy and mix it to above beaten mixture. again beat it for 2-3 minutes until everything gets mixed well.
  4. Add vanilla essence and mix it well.
  5. Add the flour and milk in 3 additions, starting and ending with flour.
  6. In Greased mould, pour the mix. Preheat oven for 10 minutes.
  7. Bake for about 25-27 minutes at 180C depending on your oven.
  8. Remove from oven and let it cool completely.
  9. Frosting for double layer cake : Beat the butter until smooth and creamy, mix vanilla essence.
  10. Add sugar and beat it well, pour little milk beat it until the mixture gets light and fluffy.
  11. Put few drops of desired colour and mix it well.
  12. Place one cake layer making sure cake bottom is facing up. 
  13. Spread the icing with the help of flat spatula, put second layer cake and cover it with icing.
  14. Fill the piping bag with the icing and decorate the cake.
  15. Place the gems overall the cake.

  • If you are using unsalted butter, you will need 1/2 teaspoon salt.
  • Grind sugar and use it in powder form to make icing or you can use store bought confectionery sugar icing.
  • Bake the cakes until a wooden skewer or Tooth pick comes out clean.
  • Make sure your icing mixture has right spreading consistency, if needed add few drops of milk.
  • While using same quantity of plain flour you can bake a large cake and frost it by cutting the cake in to two halves.
  • For decoration, you can get sugared flower or coloured vermicelli available in market.
  • Vanilla extract could replace vanilla essence.
  • How to prepare pan: apply butter in the pan, dust it with plain flour and use butter paper in the bottom.

    Btw, I've always wondered, here in US we use cup measurements for baking. How do you measure in Grams? DO you use a weighing scale? Please reply.
